Default carburetor rebuild...

there is a chance i might need to rebuild the carbs on my yamaha 90hp. ive replaced all the fuel lines going to the engine and the filter and the fuel pump. still cant get it to run. took it to a repair shop and they are going to look at it and let me know. but from talking to the guy it might be that the carbs need to be rebuilt. we think the guy before me had put ethanol gas in it.

my question is who has rebuilt there own before? where can i find a manual/instructions step-by-step to do it? or is it something i should leave to the professionals?

if it where me i would let the shop do it. have rebuilt old hollies but never seemed to run right
