Default Ever see those BBQ Pitmaster cooks running to turn in their meats on time???

Couple months ago, my stepmom asked if I could smoke the briskets (vs her cooking them in the oven) for Grandpa's 95th party.

Of course! No problem! My pleasure!

Walked next door to my place and told the girlfriend "I have a huge problem"
Of course...she asks what said problem is. "I just told my mom I would smoke briskets for the party......I'VE NEVER MADE A BRISKET!!!!

At this point I was committed to feeding briskets to 50 people

Did 3 test runs in the meantime, all on my grill instead of the lil smoker.
1st-way overcooked
2nd-LESS overcooked with great flavor
3rd-just about right, but tough

Got home from working out of town Friday night, and was handed the briskets.
Mom knew I'd been struggling a bit, but getting closer, so she watched her first ever BBQ Pitmasters epsode, which was about brisket. She took notes and handed them off to me.

With all good intentions, I used my normal marinade/injection...threw them in the fridge and set my alarm for 6 AM....this is where it goes awry!

Friday night is party night for me and the GF. Long story short..set alarm for 6 AM.APPARENTLY at 6, I threw my phone across the bedroom..woke the gf up (nuff said) and went back to sleep. Woke up at 10 in full on panic mode!

Well made plans went out the window! Ran downstairs, out onto the deck in my undies and fired up the grill, at the 350 mark i made on one of the burner controls. Jerked the briskets from the marinade, applied dry rub and threw them on the grill.
As soon as the fatte rbrisket hit 150 and the thinner 145 (Maverick 732 wireless remote thermometer), I yanked them offand foiled the with 30minutes to spare. Made the 1:00 turn in, and the briskets turned out just fine! I was so scared, I didn't even try them till my 2nd plate of food. Ended up with rave reviews!

On a related note....when I got my crock of beans back, there wasonly a half inch left

So when are we all invited over for brisket??? Glad things turned out well. That must have been one heck of a learning experience.
