It's smellin good, that's for sure. Was something odd about the peppers I picked from the garden to put in it though.. I swear I could hear screaming when I started chopping them.

I've heard of people making smoked meatloaf, but have never tried it. Let us know how you did it and how it worked out.

Pretty much any meatloaf recipe you like and I'm cooking it in loaf pans I poked holes in with a ice pick and put them on top of a wire rack in a pan so they won't be sitting in a pile of grease while they cook. I'm using a mix of hickory that I soaked all night and some kingsford trying to keep the temp between 210 and 250.

I used 3lb of ground beef, 1lb ground pork, 4 eggs, one can of beefy mushroom soup, some ketsup, and a dry pack of meatloaf seasoning. Half a bell pepper and half a onion chopped, and some bread crumbs. (didn't measure, I'm not a measurerer. They been on there since 1:30 so been 3 hours so far and curently has an internal temp of 140 going for 160.

X2 Mississippi. That looks good. I like the idea of the grease pan down below. Anxious to see how it works out.

What if you did it on a sheet tray, but not in the loaf pans? I've got one tray that has a perforated screen that leaves room between the tray and the bottom of whatever I'm cooking, to allow the drippings through, like you're doing there. I'm thinking I could use that, and leave the sides and bottom of the loaf open to the smoke, to get more of the smoky flavor.....

That should work. The guy on the youtube video just used a wire rack in a pan. Main thing is to get it up out of the grease. Saves on the heartburn a bit.

donald, just a thought bub....how about trying a cast iron pan? season it well before using. i remember seeing a lot fo "campfire cook" using cast iron for all there outdoor cooking requiring pots and such. just a thought pal.

You eat hamburgers, don't ya? Maybe you should try it made from ground possum. My Mother-in-Law is the same way - won't eat meatloaf. Well to each his own, but it is one of my favorite "comfort" foods. Sides of mac & cheese with stewed tomatoes, would be one of my all time favorites.

C'mon, y'know you want some.

My recipie, and I've made it simple:

2 lbs ground lean ground beef
1/2 lb ground pork
I jar of Pace (my choice, medium heat) chunky salsa - drained (saves cutting tomatos, pepper & onions)
2 eggs
about a cup of Italitan bread crumbs (more or less depending on moisture of mix)
salt/pepper to taste (I like little salt, good shot of fresh ground pepper)

I also like the alum, cook and toss pans.

Dang you stick, I burnt out my little Brinkman smoker many years ago and have never replaced it. NOW, I am seriously thinking about getting one, and the one you have looks terrific. I used to smoke a lot of fish - salmon & tuna - but never tried beef or pork and I think I missed out on a lot of good eats.

I really do understand. Mine was creamed chipped beef, aka dry beef gravey. I hated it, still hate it, can't stand the sight of it.
