Default Early Christmas present for me...

Bought me a new smoker for Christmas. Had a Brinkman years ago and burnt the dang thing out I used it so much, but the last few years I had gotten away from smoking stuff. Been looking a while and finally decided on a Bradley electric with digital controls. Nice to set the temp and forget about it. The pressed wood pucks are a love/hate thing, love being able to load them and not have add chips throughout the smoking process but they are rather expensive and you can only use the Bradley pucks. Been playing with it and so far I am HAPPY!
First thing I did was a smoked turkey breast. Injected with Cajun Butter and smoked with apple wood. Made terrific sandwiches.

Yesterday I tried my first attempt at baby back ribs. Light olive oil, coated with a dry rub and let stand a couple hours then into the smoker. Mesquite smoke and Baby Ray's BBQ sauce. They were fantastic.

Next up... Salmon.

Congrats on the new smoker. I've thought about getting one for years. I just might have to take the plunge after seeing your pics.
