Swimbaits
How do I use those swimbaits like the gary yamamoto and storm paddle tails? The same way as hollow bellies or do I jig them?

You can do either with just about any soft bodied swim bait. Personally, I don't jig any of them much, but I know guys who swear by it. On th epaddle tails, I usually fly weight them and keep them pretty close to the top. Let them flap around on top and then drop a few inches.

i fish a lot of lakes that have rock bluffs and steep drop offs, so how does a swimbait do just letting it sink, does it spiral or what?

Depends on the bait. If you are talking the smaller soft bodied ones then rig them with a weighted hook and they will flutter down. Almost wobbling to the bottom. In situations like you are describing, a jig head would make it swim down. If I did jig head them in that situation I would go with the lightest jig head I could get away with.
