Low and slow is the key!!
Hickory and cherry chips were used in the process. Added a little cajun rub to the meat and....... |

My favorite wood to use is apple. It works especially good with chicken and pork.

So you saw my update to my spring break pics.
It was an enjoyable week off. I'm back to work now and just spent the last two hours in the rain watching jv baseball and softball. It's cold and raining and I'm ready to go home. |

Hahaha smitty. I got a brother out law,hehehe, would is a bonafide welder (done it most of his life anyways). He will make me a smoker he said, so i got some steel and stuff. but i want a smoker/grill deal. He and i are gonna get together (he lives in mobile) one day he is up here and we are gonna draw it out. I'll get my stuff together this year and be ready before too long i hope.
