sensitivity settings on humminbird 787

should i have the sensitivity set so there is no clutter on the screen? every time i see a fish finder on someone's boat on tv there is a ton of clutter on the screen

i try to keep my sensativity set to where i get some clutter but not so much i can't see anything else. this setting will change from lake to lake and can even change throughout the day.
