P n J, I’m impressed . That right thar is a beautiful trout, and those fillets would taste mighty good with some good ole southern cooked navy beans and onions with corn fritters. Congratulations on a beaut. Nice catch…. Carpy

Thank you for the compliment Carpy.Zooker and I have had a bit of time out on the water trout fishing, whether it be in a creek with a flyrod, or out on the lake fishing downriggers.I suspect there aren't too many trout where Zooker relocated to, but I bet he hasn't forgotten how yet.

Zooker, It was a memorial tournament held here this summer.I will have to learn about how to send smoked fish through the mail for next year.I had 160 lbs smoked this year and only have 9 fillets left out of the batch.P N J

my mom went north last spring came home with 4 coolers full..you know what my uncle does right??
by the way i aint trout less down here.. got this lil feller in little buck creek in western nc..

that and it is remarkable just how the same tricks used for northern big water trout can also be used for salt water sea trout..

That's something I gotta learn how to do, smoke fish.

And sea trout ain't too bad either even though both are real light, white, and flaky (I don't prefer this type of fish, I like the thick meaty stuff like steak).

JB, You gotme confused with the sea trout picture.I am a ugly as you remembered.

Zooker, I bought this knife this summer, the other fillet knives I had are obsolete now. P N J

my wife got a me a kershaw knife kit last christmas with 3 knives, a cutting board for fillets, a set of meat cutter gloves, and a pair of scissors and a sharpening rod. you guys gotta try these blades for some sweet fillets, they are sharp and easy to work with, clean up good, and resharpen in a matter of seconds.

kersaw knives owns the old ka-bar factory in olean ny..i have family that still works there.. those fillet knives come off the same machines that used to punch out the old ka-bar marine knife..i have several... i do own the larger "adjustable" lenth kersaw fillet knife. but on something as small as that trout it is unwielding..i also own a MUCH larger 1 off fillet knife that was lapped on the ka-bar lap wheel..it was made from an old lawn mower blade-no joke- i used to use it on big trout and salmon..
