Yep, red onions are the best way to go, hands down. I wasn't able to this time around, due to the undersized, ratty selection at the grocery store.

err i'll pass on the nachos...
one trick to throwing down a slab of onion. use bammboo skewers and thru the slab of onion. hit it on the hot side of the grill for about 2 mintues a side this really makes the onion flavor pop... zooker

Also...make sure to oil your onion when you grill it. It helps it caramelize better, rather than just burn.

Went to the grocery store to pick up some ground beef, and the tobasco, and bbq sauce (just used the last of ours on ribs last week.
So I get there. They have four of the five flavors of tobasco sauce. Guess which one they didn't have? I found a different chipotle but the bottle said VERY HOT. Besides my sister (who doesn't live at home) I'm the only one who likes hot stuff, so I went with Tobasco's green pepper sauce. I tried some straight from the bottle... not that hot. Even with the four kinds of Sweet Baby Rays that they did have, guess which kind they didn't have? Again, the honey chipotle... So, I've decided, I'm making BB's Mallen Burgers tonight Pretty much the same, without any chipotle, lol. Also, no store bought burger either. 2lbs ground chuck (90% lean), Stubb's Burger spice, worchestershire sauce, a bit of water (a must when using a leaner beef), and some grated Parmesan cheese to help hold the burger together, oh and salt and pepper. So, like I said, not exactly mallen burgers, but I'll let ya know how everyone likes them. BB

Wow, those were definitely great burgers!
Since I changed some stuff on them (mostly due to unavailability), We didn't have Mallen Burgers, we had Mallen BBurgers. I did pretty much what I said above, and did like Zook and nofear said: put some olive oil on the onions and grilled them on skewers. Also, I tried oiling the grates with a papertowel, and it worked great, burgers didn't stick at all! BB
