grass shrimp and domestic shiners (wild shiners are typically too big for most stripers).

WOW, I have never heard anyone say wild shiners are too big, especially for stripers? Well I don't fish for them here in Indiana, we just have the wipers(hybrids) mostly, but we do have a decent lake that has them. Most folks use shiners, spoons, or rattletraps.

There's a couple old timers I know who fish lake george every weekend, and can fill a cooler in a couple hours of fishing. The 2 baits they use exclusively are domestic and grass shrimp. Stripers mouths tend to be too small for the Wild Shiners at least down here. I don't know if its because the shiners down here are bigger 10-14 inches, or the stripers are smaller, don't really know, but Leo has told me before, whenever using Wilds, the bite is slow.
