What would throw on docks, points, dropoffs, coves, beds, rocky spots and lilly pads?

like tubes, lizards, bush hogs, worms, etc. both t-rigged and on the fly. In some cases maybe some small shallow running cranks, or even top water baits, according to the room you have available.

Everything, until I found out what they wanted You can use c-rig, t-rigs, mojo-rigs, weightless for the trillions of plastics. Spinnerbaits of a thousand diffent kinds. Topwater of a hundred different kinds. Crankbaits of a million different kinds. Jigs of a Gazzilion different kinds. I know that isn't the answer you wanted but the conditions, would dictate more of what I would start with All of the baits could work with different conditions with everyone of those covers or structures. Plus even a chatterbait probably too.
