fer chicken and beef..

2 Quarts Ketchup (64oz.)
2 cups Apple Cider Vinegar
1/2 cup Sugar
1-2 tbs. Garlic Powder
1 tbs. Celery Seed
1 tbs. Ground Cumin
1 tbs. Chili Powder
1-2 tbs.Cayenne Powder
1/8th cup Coarse Salt
1/2-1 cup Water

Adjust the selection of spices and quantities to make it your own secret sauce! Mix all ingredients as shown, and then simmer on the stove for 5 minutes or more, depending on how thick you like your barbeque sauce.

for pork i use speedy's pork sauce..

however
this one works also..

1 quart ketchup (32oz.)
1 Beer (12oz.)
1 cup Apple Cider Vinegar
1/4 cup Brown Sugar
4 tbls. Worcestershire Sauce
4 tbls. Coarse Salt
1 tbl. Garlic Powder
1 tbl. Cayenne Powder
1 tbl. Chili Powder
1 to 2 sticks Butter
3-4 Jalapeno Peppers, fresh or pickled

Combine all ingredients and then simmer in a pan until thickened. Use for mopping and dipping barbeque sauce.never use a regular beer but malt beer -coors or colt 45-

I don't make BBQ sauce, but I do eat BBQ. Up in north alabama, for BBQ chicken we often use something regional called white sauce. I googled the following recipe...

* 1 cup mayonnaise
* 1 cup cider vinegar
* 1 tablespoon lemon juice
* 1 1/2 tablespoons black pepper
* 1/2 teaspoon salt
* 1/4 teaspoon cayenne

It is good stuff.

Bassboss, i will tell you everything you want to know about bassfishing (which by my record ain't too much,lol). BUT............not about my bbq sauce, or how i cook it. It never is the same either, when i mix it up it turns out a little different every time. Go to BPS and get the book by PAUL KIRK called PAUL KIRK'S CHAMPIONSHIP BARBEQUE SAUCES. it has a lot of great sauces and marinades,dry rubs, mops and salsas. i am working on all the above for to get mine just right. when i get my "smoker/grill/outdoor kitchen, it is gonna be a sight to behold. patience is the key to good b-b-qing. oh yeah, the book was only $12.00. go and get it pal. make your own sauce form the recipes. you'll have fun doing it too.
