Default Homemade Salsa... and a few lessons learned.

I made some salsa last night for the first time and I learned a few things.

1. Fresh tomatoes are the way to go.

2. Too much Cilantro is a bad thing.

3. Jalapeños aren't that hot (I had never eaten a raw one before)

4. Jalapeños still burn like he!! if you get them in your eyes!

A friend of mine absolutely LOVES hot food...the hotter the better. When he tried some habaneros for the first time, he didn't mind the hotness when he ate them. But a couple of hours later when he scratched his eye, he had to run to the sink to flush it out with water for a long time. That oil sticks around for a while...

cilantro is like parshly a lil goes a LONG way... tomatoes- to make fresher place in ice water with salt stir them around 30-45 seconds out and cut same with onions...

the key is FRESH everything else is crap...
romain tomatoes stay fresher longer and have a great taste.
red onion is the thang for salsa

pino's well theres two lines of thought here.
fresh straight pino's =good
lightly grilled pino's = much better

i use pino's and hablanero's in my salsa-remember i KNOW mexican salsa- use only a sliver of hab's in the mix ,or your azz WILL be sorry..

Fresh homemade salsa is da bomb when done right. Jalapeno's ain't hot at all really, but their seeds got a bit of kick to them.....I use alot of jalapenos in my cooking simply because of the flavor it adds to a dish....not the heat like one might think.

I did learn a neat little trick from one of the mexican cooks at the restaurant the wife and daughter work for.....if you want more heat from your pino's then roll them back-n-forth on the counter top a few times, using the palm of your hand while adding a little downward pressure....now grill them and you've got a pino with some kick.....try it and see the difference it makes.

I remember the first time I over did it with fresh cilantro....lol....I learned real quick that a little goes along ways.....and yep, fresh is best.

Coming from a man who eats 2 jars of salsa a week. I have to say that sounds great.
